Crispy Soy-Glazed Peanut Sprouts on Tender Pea Shoots
Prep Time: 5 mins | Total Time: 10 mins | Servings: 2–4 | Key Microgreen: Peanut Sprouts & Pea Shoots
Made with Oh Micro! Peanuts Sprouts & Pea Shoots
Ingredients
- ¼ lb Oh Micro! Pea Shoots
- ½ lb Oh Micro! Peanut Sprouts
- 1–2 tbsp cooking oil (neutral oil with a high smoke point)
- 1 tbsp soy sauce
- 1 tbsp toasted sesame seeds (or a drizzle of toasted sesame oil)
- Ice water bath (for blanching)
Instructions
- Blanch & Shock the Peanuts: Bring a small pot of water to a rolling boil. Add the ½ lb of peanut sprouts and boil for exactly 1 minute. Drain immediately and plunge them into ice water to cool rapidly. Drain well and pat dry with a towel.
- Heat the grill to medium-high heat. Add the blanched peanut sprouts and stir-fry for 2–3 minutes until fragrant and toasted.
- Remove from direct heat and stir in the soy sauce and sesame seeds. Toss quickly to coat every peanut sprout in the savory glaze.
- Pour the sizzling hot peanut sprouts directly over the bed of fresh pea shoots. Serve immediately while piping hot!
Contrast is Key: Don't cook the pea shoots! The secret to this dish is letting the heat from the hot peanuts gently warm and soften the fresh greens right at the table while keeping that refreshing crunch underneath.
